Baked Bao with Hoisin Turkey

Ingredients

1 lb cooked turkey or chicken, finely diced or shredded1 ½ tbsp honey⅓ cup hoisin sauce2 tbsp dark soy sauce1 tbsp oyster sauce½ tsp pepper5 green onions, sliced2 tsp toasted sesame oil---Dough4 cups all purpose flour1 tbsp instant yeast3 tbsp sugar1 cup warm water2 eggs, slightly beaten⅓ cup sesame oil1 tsp saltEgg wash: 1 egg beaten with a dash of water
Filling:
Combine all the ingredients in a bowl, stirring well. Cover and chill at least 1 hour.
Dough:
Combine all the dough ingredients in the bowl of a stand mixer and knead for approximately 10 minutes. The dough should be smooth and slightly elastic.
Cover and let rise until doubled.
Heat the oven to 400º F.
Knock back the dough and divide into 16 equal portions.
Working one at a time, roll out each ball to about 3” diameter.
Place a tablespoon of filling on the dough circle, gather the edges and pinch to seal your bun.
Place buns, seal side down, on a lined cookie sheet and brush with egg wash.
Bake for 15 minutes or until golden brown.
