Slow Cooker Szechuan Chicken and Broccoli

1 1/2 lb boneless, skinless chicken breast , cut into 1" pieces1 dash Salt 1 dash Pepper, black 1/2 C picante sauce ( you can use salsa)2 tbsp Kikkoman Less Sodium Soy Sauce 1/2 Tbsp Quick Cooking Minute Tapioca 1 medium (2-1/2" dia) Onions, raw chopped2 clove Garlic, minced 1/2 tsp Ginger, ground 3 cups broccoli florets1 medium red pepper, cut into pieces
1. Grease your slow cooker with nonstick Spray. (I used my 4 Quart
slow cooker.)
2. Place the chicken in the slow cooker.
3. Season the chicken to taste with salt and pepper or your favorite seasoning. (I used Jane's crazy mixed-up
salt.)
4. Place the remaining ingredients in the slow cooker and toss/stir to combine.
5. Cover and cook on HIGH for 2 to 3 hours or on LOW for 3 to 4 hours, stirring until the chicken is done and
vegetables are crisp tender.
6. Season to taste with additional salt, pepper and soy sauce.
7. Serve with brown rice and additional soy sauce, if desired
