Peanut Butter curry wings & Basmati rice

Ingredients
8 tbsp Curry powder 2 cup (8 fl oz) Chicken Broth or Bouillon 1 cup, chopped Onions, raw 1 cup, cubes Sweet potato 4 tbsp JIF creamy peanut butter 2 serving Chicken Wing, whole wing, baked with skin (medium size) 3 cup Basmati Rice, Mahatma(1/4 c dry, 3/4 c prep) 2 tsp Ginger Root 1 clove Garlic 1 tbsp Cilantro, dried
Directions
Coat wings/ brown in pan with coconut oil or veg oil- remove wings add chopped onion cook until soft add chicken stock/ fresh minced ginger/ and chopped garlic- then re-enter chicken wings and cover and slow cook low medium until meat is fully cooked reaching 165 degrees internally. serve over rice and sprinkle fresh chopped cilantro and enjoy.
