Ingredients
Flour, white, 1 cupBaking Powder, 1 tspSalt, 1/4 tspEgg, fresh, 1 largeGranulated Sugar, 1/4 cupMilk, nonfat, 3/4 cup
Directions
Makes 8 Pikelets (approx)

Sift flour, salt and baking powder, make a well in the middle.

In a separate bowl beat egg and sugar until fluffy and thick.

Add sugar and egg with the milk to teh sifted ingredients.

Beat all of the ingredients until smooth.

Drop tablespoons full of mixture onto a hot non-stick surface. Turn over when bubbles start to pop in pikelets. Cook otherside until golden.

If you are feeling a little naughty you can cook these in butter and add 25g of melted butter to the mixture. Possibly not the healthiest alternative, but yummy all the same.

    I accidentally mixed all the dry ingredients and then all the wet ones, instead of the sugar and the eggs. Still turned out great. I ate it with raspberry jam. I had about 12 servings. - 7/6/08

    cook with out oil and it should cut down the calories it did when i put my way of making it in without oil on a non stick pan. - 4/25/08
