Rachel's Chicken Salad

Ingredients
- 2 chicken breast- a little less that a 1/2 cup of light mayo- 1 cup fo red grapes (cut in half)- 2 large celery stalks cut in to small pecies- 1/2 of pecans (or walnuts or almonds) chopped- fresh parsley chopped finely about 4 tbs- salt and pepper to taste
Directions
boil the chicken breasts in a pot (can use low sodium chicken stock instead of water for more flavor). After chicken is cooked through take out to cool and shred. After Shredded put into a bowl add chopped grapes, celery, nuts and spices. Add mayo and gently fold together.

Serve with lettuce, bread, croissants, or crackers.

Add tomatoes, lettuce cheese or tomatoes (even bacon) on a sandwich. yum!
