Kale, Sausage & Vegetable Soup

Ingredients
4 tbsp Extra Virgin Olive Oil 2 cup, chopped Onions, raw 2 large (7-1/4" to 8-1/2" long) Carrots, raw 2 serving Celery - 1 medium Stalk (by MOSBOURNE) 4 serving Sausage, Smoked Andouille Chicken Sausage Trader Joe's YUM 10 oz Trader Joe's Organic Tuscan Kale 2 cup Cannelini Beans (by JENNIFERMARIA75) 1 medium (2-1/4" to 3-1/4" dia.) Potato, raw 28 oz Muir Glen Fire Roasted Diced Tomatoes (by MISS_THING) 8 tsp Better than Bouillion, chicken base (by NPAUL929) 8 cup Boiling water (by SANDYJ59) .25 tsp Pepper, black .5 tsp Kosher Salt, Morton Coarse (by DLEEGUILL) 4 clove Garlic
Directions
In large soup pot or dutch oven, sauté onions, carrots & celery on medium heat about 10 minutes until softened.  Add garlic and kale, cover, reduce heat to medium low and cook about 2 minutes.  Stir in all other ingredients, cover and simmer on medium low about 30 minutes.  Serve with a dash of Tabasco if you like a bit more spice.
