Coconut Curry with Lentils

1 Small Onion, diced1 clove garlic, minced2 Tbsp Olive Oil1 large Celery Stalk, chopped1 medium potato, cubed1 medium yam, cubed2 cups vegetable stock3/4 cup dried lentils1 Tbsp curry paste (I like Thai Kitchen Red Curry Paste)1/2 tsp salt1/2 tsp pepper14 oz. can Lite Coconut Milk1/4 cup fresh cilantro
In a medium soup pot on medium heat, saute onions in olive oil until translucent. Add garlic and celery and saute for 5 more minutes. Add yams, potatoes, stock, lentils, curry paste, salt and pepper. Bring to a boil then reduce heat and simmer for 25 minutes or until potatoes are cokked through. Stir in lite coconut milk. Blend half of the soup on food processor or blender until smooth. Return to pot, stir in the cilantro and serve over brown rice.

This is absolutely delicious! It's pretty easy and SUPER tasty. It was a little starchy for me and I might omit the white potato, but my fiance loved it as-is. I think it would be great with a green veggie added in or on the side like green beans or broccoli. Thanks for a great recipe! - 6/22/09
