Avocado and Tomato sandwich

Ingredients
One avocado (small), 2 pieces bread, fat free/low fat mayo, alfalfa sprouts, tomato (optional), salt&pepper pinch.
Directions
Take 1 small avocado, remove skin and seed, and cut into thin slices. Cut 2 thin slices off the tomato (optional). Toast 2 pieces of your favorite bread, then spread on roughly 1tbsp of fat free/ low fat mayo. Top with the avocado and tomato slices, and pinch off a little bit of the alfalfa sprouts (about 2tbsp). Salt and pepper to taste (I find the avocado only needs a very little bit to add some nice flavor). My favorite thing to drink with this is water... really, they go together. This is a full meal in itself and always leaves me feeling satisfied for a long time after. Hope you enjoy.

    my new favorite sandwich! instead of mayo I mashed the small avocado and some fat free kraft thousand island salad dressing together for a spread and then sliced a tomato and added the sprouts on wheat bread. Very satisfying! =) - 4/25/09

    Great idea, however the calorie and fat content is way high. Maybe using KmXCarlile's idea to mash it in with the dressing and then added a bit of it to the bread would work well. Even adding onion, cucumber, or other veggies to the sandwich would be it hearty, yet low-fat. - 2/16/10
