Crepe Suzettes

Ingredients
4 serving 2% Milk (1 cup per serving)4 Eggs-large 1.5 cup Flour 4 tsp Granulated Sugar .5 tsp Salt .5 tsp Nutmeg, ground .5 tsp Cinnamon
Directions
Whisk the milk, eggs, flour, sugar, salt, nutmeg and cinnamon together to remove any lumps. Batter should be fairly thin. Into a hot large skillet, or crepe pan, place a sliver of butter (about 1/4 tsp) and melt at medium-high heat. Once melted and spread around with a spatula pour a ladle-full of batter into hot pan. Rotate the pan until the batter is spread thinly over the bottom of the pan. Once bubbles have formed and edges are turning a golden brown and batter has bubbled up, gently flip over. Once it's golden brown on both sides, with edges a nice lacey pattern, flip onto a plate. Using a spoon spread some sugar all over the suzette. Gently fold it over a little at a time until you have a long rolled tube. Put a little more sugar over the top and enjoy eating.

Crepes may also be filled with preserves, or drizzled with syrup once rolled.
