Oatmeal, Banana Raisin Cookies

Directions
Dry ingredients:1 1/2 cups dry oats (regular or quick), divided1/3 cup raisins1/8 cup whole wheat flour1 1/2 tsp baking powder1/2 tsp cinnamon, ground1/8 tsp stevia extract powderWet ingredients:1 med ripe banana1/2 cup applesauce, unsweetened1/8 cup water1 tbsp maple syrup1/2 tsp vanilla extractTopping: (optional)1 tbsp coconut sugar
Preheat oven to 375 degrees. Divide the oats and grind half (3/4 cup) into flour using a blender. Add to a mixing bowl with the rest of the dry ingredients.
Add wet ingredients to blender and process until smooth. Add to mixing bowl with dry ingredients and mix until combined. "Dough" will be somewhat wet and you will not be able to form into balls. Drop by spoonful onto to parchment lined cookie sheet (or use a silicone liner). Because there is no fat in these, they will not spread out, but will retain shape while baking.
Sprinkle 1/4 tsp of coconut sugar on top of each cookie and bake for 15-17 minutes. Enjoy warm!
