Ingredients
Yogurt plain, nonfat- 32 oz containerCucumber (with peel) 1 large or 1 1/2 mediumGarlic minced or pressed, 2 clovesFresh chopped dill 2 TbsLemon juice 1/4 cup Salt, 1 dash Pepper, black, 1 dash Onions, raw, 1 tbsp chopped Olive Oil, 2 tbsp
Directions
Line a strainer with a cheese cloth or coffee filters. I use coffee filters. Place strainer in pot or bowl. Empty yogurt into strainer and place in frige for a few hours, allowing water to drain away from yogurt. It is important to do this or you will have watery sauce- yuck.
In the meantime, wash your cucumber, and cut off the ends- split in half lengthwise, and scoop out the watery middle where the seeds are (even seedless cucumbers have this) Grate your cucumber with a metal grater or in the food processor. Place on cheese cloth, or paper towels, and squeeze out as much water as you can. Again, very important- watery sauce- yuck.
Place cucumber in bowl, add strained yogurt, and all other ingredients- mix well, cover, place in frige for 2 hours, and serve with just about anything. Nutrition info is to serve 8.

I made this for my boyfriend and myself. Since he is allergic to dairy, I subsituted soy yogurt, but I couldn't tell the difference! I've been looking for a tasty tzatziki sauce to make at home; I've finally found it! - 11/5/11

this absolutely rocks! i made a few changes to make it extra low fat but its still super yummy :]

    changes:
    -non fat plain yogurt
-italian flat leaf parsley instead of dill
    - no olive oil
    - no onions

although i'm sure the original is delicious- thank you! - 12/1/09
