Low-Carb Coconut Flour Pancakes

1/4 cup Heavy Whipping Cream 2 tbsp melted Butter, salted 1 tsp Vanilla extract 2 large Egg, fresh, whole, raw 1/2 tsp Salt 1/4 tsp Baking Powder 2 Tbsp. Bob's Red mill Coconut Flour
Heat pan or griddle to medium heat.
Combine dry ingredients.
Combine melted butter, eggs, vanilla, and whipping cream. Whip lightly. Add dry ingredients to wet and mix completely.
Spray griddle or pan with cooking spray, then pour on half of batter. Let cook till bubbles form on surface, then flip pancake. Repeat with rest of batter. Top as desired.
