La Summa's Chicken and Vegetable Stew

Ingredients
1.0 large Onions, raw2.0 clove Garlic1.0 large whole (3" dia) Red Ripe Tomatoes5.0 leaves Basil8.0 thigh, bone and skin removed Chicken Thigh4.0 fl oz White Wine0.5 cup (8 fl oz) Water, tap1.0 small (1-3/4" to 2-1/2" dia.) Potato, raw5.0 serving green olives (2 olives - queen size)1.0 cup Peas, frozen3.0 tbsp Parsley1.0 tsp Salt0.25 tsp Pepper, black
Directions
Heat oil in a large saucepan. Add onions and sauteed until softened. Add garlic and sauteed another 30 seconds. Add chicken and sauteed until it starts to Brown. Add tomatoes and basil and cook until chicken loses its pink color. Add wine and potatoes, bring to a boil. Reduce broth as desired and then add Sicilian olives and more water if desired. Cook 30 minutes. Add frozen peas, salt and pepper. Cook for 5 minutes. Serve over rice or as is.
