Curried Sweet Potato and Apple Soup

8 tsp Better than bouillion no chicken base (by CHRISTINEDC) 1 tbsp Extra Virgin Olive Oil 1 cup, chopped Onions, raw 2 medium Carrots, raw 2 clove Garlic 1 tsp Ginger Root 6 cup (8 fl oz) Water, tap 3 cup, cubes Sweet potato 2 cup diced Potato, raw 4 fl oz Red Wine 1 tsp Curry powderSalt and Pepper to taste
Heat oil in a large pot over medium heat. Add onion, garlic, ginger and onions and saute, lightly stirring with wooden spoon until onion is translucent, about 5 minutes. Add remaining ingredients and stir.
Cover and reduce heat to low, Cook potatoes until tender, about 1 hour. Taste and adjust seasoning.
Puree soup in food processor and return to heat just before serving
