6 large Egg, fresh, whole, raw 3 cup, pieces or slices Mushrooms, fresh 3 cup Spinach, fresh 1 cup, chopped Green Peppers (bell peppers) 2 tbsp Olive Oil
1. Preheat oven to 400
2. Grease 8x8 pan with the olive oil
3. Place bell peppers, mushroom and spinach in baking dish.
4. Crack eggs into a separate bowl and whisk.
5. Add salt and pepper.
6. Cooke until whites are set - approximately 25 minutes.
