Low sodium Margherita Pizza

Ingredients
1 Caulipower frozen pizza crust2.0 cups cherry tomatoes4.0 oz Fresh Mozzarella, sliced3.0 clove Garlic3.0 tbsp Extra Virgin Olive Oil2.0 tbsp fresh Basil, chopped0.25 tsp Pepper, black
Directions
Chop garlic cloves in half. Place cherry tomatoes and garlic in roasting pan or sheet pan and drizzle with EVOO, making sure tomatoes and garlic are well coated. Sprinkle with pepper. Roast in oven for 15-20 minutes at 400 degrees F. Spread roasted tomatoes on pizza crust. Chop up roasted garlic and spread over tomatoes. Place sliced mozzarella on top. Sprinkle fresh basil on top. Bake pizza at 425 F for 12-14 minutes.

    I wasn't sure about the Cauliflower Crust, but with the toppings it was delicious! And the crust was nice and crunchy. I didn't miss the sodium, and neither did my boyfriend. - 3/23/19
