Roasted balsamic vegetable medley

Ingredients
2.0 cup Green Beans (snap)1.0 cup, pieces or slices Mushrooms, fresh1.0 cup, sliced Onions, raw971.0 Grams Potato, raw5.0 tbsp Balsamic Vinegar2.0 tbsp Extra Virgin Olive Oil
Directions
Preheat oven to 375F. Coat a large baking sheet with non stick spray and set aside. In a large bowl mix cubed potatoes and sliced onion. Add the olive oil, 4 tbsp. of balsamic vinegar, salt and garlic powder to taste. Add the potatoes and toss to coat fully. Arrange mix on the baking sheet before roasting for 20 minutes. After 20 minutes, add the asparagus, mushrooms and drizzle with a little extra olive oil, if needed/desired. Mix to coat and cook for a further 15 minutes. Season with remaining balsamic vinegar, serve and enjoy Serving Size: Serves 5
