Paleo Sweet Potato Pancake

Ingredients
1 sweet potato, 5" long Sweet potato 4 large Egg, fresh, whole, raw 1 tsp Onion: Granulated (Sauer's) (by NANIMAL52) 1 tsp Garlic powder 3 tbsp Bob's Red Mill Coconut Flour (by BABYHUNT) 2 1tsp Olive Oil .5 tbsp Maple Syrup
Directions
Grate one large sweet potato (3 cups approximately). Whisk the eggs. Add the eggs and the flour, garlic and onion and mix well. Heat 2 tbsp olive oil and drop 1/4 cup and slightly flatten. Brown until edges start to crisp and flip. Cook until 2nd side is browned. Serve with tsp of maple syrup drizzled on top.
