Ingredients
4.0 oz Cream Cheese0.5 cup Coconut Oil0.5 lemon yields Lemon Juice4.0 tbsp Kerry's Gold Pure Irish Grass-Fed Butter (Unsalted)12.0 serving Great Value No Calorie Stevia1.0 tbsp lemon extract
Directions
Zest a whole lemon. Melt coconut oil. Cream softened butter and cream cheese. Beat cream cheese mixture until smooth with electric handmixer or whisk, pouring in the melted coconut. Can also use a high powered blender. Add in remaining ingredients then add in lemon zest and stevia packets or Splenda and continue whipping until smooth. Adjust for desired sweetness. Spoon into ice cube trays or other molds and top each with some of the lemon zest. Freeze for at least 3 hours. Pop out of tray when done and store in a glass container in the fridge or freezer. Serving Size: Makes 16 ice cube tray size servings
