Buttered Celery Soup

Ingredients
500.0 Grams Celery, raw1.5 stick Butter, unsalted2.0 tbsp Extra Virgin Olive Oil200.0 Grams Onions, raw200.0 Grams Potato, raw4.0 cup Swanson Natural Goodness Chicken Broth32.0 oz Pacific organic Bone Broth, chicken
Directions
In a large pot with a lid, melt butter and oil over medium heat. Add chopped onion and celery and cook about 10 minutes, covered, stirring occasionally. Add diced potatoes and stir to coat. Add broth and bring to a boil. Reduce to a simmer and cook uncovered about 30 minutes, or until celery is very tender. Use an immersion blender to make the soup smooth. Salt and pepper to taste.
