Roasted Garlic Mishroom Soup

Ingredients
3 serving Baby Bella Mushrooms (3 oz) 141 grams Shiitake Mushrooms 13.5 oz Thai Kitchen Light Coconut Milk 1 cup, chopped Onions, raw 10 cloves Garlic
Directions
Sauté sliced onions in a soup pot with a quick spray of olive oil until translucent and slightly brown. Add sliced mushrooms, salt, pepper and half head of roasted garlic. Add your herbs such as thyme or sage. Cover and heat on low. Once mushrooms have released their juices, add can of coconut milk. Bring to a quick boil. Remove from heat and blend your soup using hand immersion or blender of your choice. Careful with hot liquids and blenders please.
