Butter Chicken with coconut milk [paleo]

3 tbsp Butter, unsalted
2 lbs Boneless Skinless Chicken Thigh, cubed
1 Tbs Ginger Root
1 clove Garlic, crushed
2 tsp Coriander
2 tsp Cumin
1 tsp garam masala powder
1/4 tsp Chili powder
2 Tbs Tomato Paste
14oz can Petite Cut Diced Tomatoes
14oz can Coconut Milk or cream
Cook chicken in 1 Tbs butter. Remove from pan, add 2 Tbs butter, ginger and garlic. Cook 2 mins. Add spices, cook 2 mins. Add tomatoes and paste, simmer 10 minutes. Return chicken to pan, add coconut milk. Simmer 5-10 minutes until cooked through. Serve with rice or naan.
