Sausage and Parmesan stuffed tomatoes

Ingredients
2lbs Ground Pork Sausage2 medium (2-1/2" dia) Onions, raw 8oz package Mushrooms, chopped8 medium whole Tomatoes 2 oz Pork Rinds, crushed 1 cup Parmesan Cheese, grated 0.5 tsp Garlic powder 0.35 tbsp Basil 1 tsp Oregano, ground Salt to taste
Directions
Cook sausage with onions, mushrooms and seasoning until done. Drain. Using melon baller remove insides of tomatoes making sure not to break the walls on the outside. Drain seeds and juice from tomato guts and add to pain for 2 minutes. When slightly cooled add Parmesan cheese and crushed pork rinds. Stuff tomatoes with mixture. Bake at 375 for 30-45 minutes depending on how well you want your tomatoes done. Serving Size: Makes 8 stuffed tomatoes
