1.0 tbsp Canola Oil2.0 tbsp Hoisin Sauce0.5 cup, chopped Onions, raw0.5 cup slices Waterchestnuts (water chestnuts)1.0 tbsp Soy Sauce1.0 cup Tangerines, (mandarin oranges), canned1.0 cup Quinoa & Whole Grain Brown Rice (Seeds of Change)4.0 serving Vegetables, Frozen, Stir Fry Vegetable Blend, Kirkland, 1cup16.0 ounces Chicken Breast (cooked), no skin, roasted
Marinade chicken in soy sauce. Heat oil in skillet or wok. Stir fry onions and garlic. And chicken and cook on medium to med-high until cooked thoroughly. Add stir fry vegetables and cook until tender. Add water chestnuts. In a separate bowl drain juice from mandarin oranges. Add hoisin sauce to juice. Add juice to a sauce pan and while stiring continually heat on medium until sauce thickens. Add oranges to stir fry in skillet. Once sauce thickens toss the stir fry with the sauce. Cook quinoa rice as instructed and top with stir fried chicken and vegetables.
