Bridget May's Peanut Butter Granola Bars

Ingredients
0.5 tsp Cinnamon, ground0.5 tsp Salt2.0 tsp Vanilla Extract2.0 medium (7" to 7-7/8" long) Banana, fresh0.5 cup, shredded Coconut, raw0.5 cup Peanut Butter, smooth style, with salt0.5 tsp Baking Powder0.5 cup Honey0.5 cup, packed Brown Sugar6.0 cup Oats, Quaker4.0 tbsp *Flax Seed Meal (ground flax)8.0 serving Trader Joes Vanilla Whey Protein Powder
Directions
1. Grease cookie pan with sides. 2. Mix dry ingredients together in large bowl. 3. Mix banana, honey, melted peanut butter, and vanilla extract in a separate bowl. 4. Mix the ingredients from both bowls together. 5. Spread mixture into pre-greased pan and cover with aluminum foil. 6. Bake at 350 degrees for 20 minutes, uncover, and then bake for an additional 10-15 minutes or until lightly browned. **If you prefer chewy granola bars, pre-cook 2 of the 6 cups of oatmeal in 1 & 3/4 cups water. Then begin cooking instructions above. Serving Size: Makes 24 2x4 inch bars
