Low Carb Rasberry “Gelato”

2 oz Cream Cheese 1 tsp Vanilla Extract .33 cup Raspberries .5 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream 0.5 serving Erythritol 1/4 Cup (by CYBERGRANNY1)
Whip cream in stainless steel bowl, adding sweetener (minus one tablespoon; reserve. gradually, until soft peaks form.. In separate bowl, whip cream cheese and vanilla, again, looking for soft peaks. Gradually combine the two. Separate into two freezer safe containers with lids. Put in freezer for 15 minutes. Put raspberries in small microwave bowl. Add reserved tablespoon of sweetener. Stir. Microwave for 1 minute 10 seconds, stopping and stirring at least twice. Remove from microwave. Let cool, stirring occasionally. It should thicken up in approximately 10 minutes. Remove “gelato” from freezer. Spoon raspberry jam directly over the gelato. Use a small spoon to make swirls throughout. Return to freezer. When ready to eat, let sit in fridge 30 minute before serving.
