Vegan Chicken Salad

Ingredients
1.5 cups diced Butler Soy Curls (see note below about prep).5 cup diced celery4 Tbsp Trader Joe's Reduced Fat Mayonnaise (vegan)4 tsp Dijon mustard
Directions
Soak about 1 cup of Butler Soy Curls in warm water for 10 minutes (when they rehydrate, they expand, so you'll end up with about 1.5 cups). Remove from water, squeeze out any excess liquid, and dice.
Mix soy curls with diced celery, mayonnaise, and mustard.
Feel free to adjust the amounts to taste if you prefer creamier salad.

Makes about 4 half-cup servings.
