Italian Sausage and Vegetables

16 oz Ground Pork Sausage, Lean cooked, drained 1 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers) 1 cup, strips Green Peppers (bell peppers) 1 large Onions, raw 3 clove Garlic 1 medium Zucchini, baby 1 medium Summer Squash 2 cup Spaghetti/Marinara Sauce (tomato sauce) 1 cup Canned Tomatoes
Wash and prep vegetables (cut onion and peppers into strips, finely mince garlic and slice squash into uniform discs). Open and drain tomatoes.
In a large, deep skillet cook the sausage until no pink remains.
Add onion and peppers, saute until onion is translucent and beginning to soften.
Add garlic, drained tomatoes and sliced squash.
Stir in marinara sauce.
Reduce heat to low and simmer covered until vegetables are softened (to cooks preference).
Serve over 1/2 cup brown rice for an under 500 calorie meal.
