Strawberry Caramel Sundae Sauce

1 cup sugar ½ cup water⅔ lb strawberries, pureed1 tbsp lemon juice1 tsp pure vanilla extract
Prepare a boiling water bath canner and three ½ cup jars.
Combine sugar and water in a small saucepan over medium-high heat and cook, without stirring, until the sugar reaches 250°F.
Remove the pot from the heat and stir in the strawberry puree, lemon juice and vanilla. It will bubble vigorously, but keep stirring.
Return the pot to the heat and continue cooking, while stirring, until the sauce reaches 218°F.
Pour into the jars and process in a boiling water bath canner for 10 minutes.
Serving Size: Makes ~1 1/2 cups, 6 (1/4 cup) servings
