Baked Turkey and Jack Cheese Chimichangas

Ingredients
2 sprays fat free cooking spray1/2 lb. ground turkey breast16 oz can fat free refried beans8 oz salsa4 1/2 oz can drained, chopped green chilies1 tsp. chili powder3 Tbsp. chopped green onions1 cup Shredded reduced fat, Monterey Jack Cheese8 burrito size, Whole Wheat Flour Tortillasextra salsa, 1/2 Cup fat free sour cream
Directions
Preheat oven to 350. Coat 9X13 pan with fat free spray. Brown Turkey in sprayed skillet. Add beans, 8 oz salsa, chilies(drained), chili powder, and onion. Cook until heated. Stir in cheese. Warm Tortillas in foil - 10 minutes. Spoon 1/2 cup turkey mix into tortilla. Fold in sides and roll up. Place chimichangas in 9X13 pan. Bake un-covered 20 - 30 minutes until crisp and brown. Top with 2 Tbsp salsa, 1 Tbsp sour cream

    These are very good! Not the traditional fat fried chimi. more like a baked burrito but easy to make and the whole family loved them. Didn't even realize I had used ww tortillas which they always complain about. Definately a keeper! - 8/19/08
