2 serving cheese, Kraft Italian 5 cheese blend (1 oz or 1/4 cup) 10 serving Cherry Tomatoes, Fresh, 1 Tomato 12 large Egg, fresh, whole, raw 1 cup Spinach, fresh 1 cup, pieces or slices Mushrooms, fresh 4 tbsp Half and Half Cream 2 medium (4-1/8" long) Scallions, raw 2 tbsp Extra Virgin Olive Oil salt and pepper as needed
preheat oven to 350
heat oil in skillet and cook mushrooms until soft, add tomatoes and onion, then spinach. mix half and half into whisked eggs with salt and pepper. pour eggs into skillet. add cheese and carefully mix into eggs then move skillet to oven and bake for about 20 minutes or until firm and golden brown.
Serving Size: 1/6 of skillet
