Ingredients
230 Grams Butter, unsalted 3 large Egg Yolk 285 Grams Granulated Sugar 300 grams Flour, white 1 tsp Lemon Peel 0.5 tsp Vanilla Extract 80 mL Lemon Juice 260 mL Water, tap 30 g Cornflour (UK) 3 serving Egg whites, Egg Beater Liquid Egg Whites
Directions
Cake dough : Make dough from 2 egg yolks , 200 g butter , 100 g sugar, 300 g flour, 1 tsp lemon zest , 1/2 tsp of vanilla extract Cool for 1 hour and than spread on the baking dish and cook until getting brown Filling : In a small pot , hit and stir 80 ml lemon juice, a bit of lemon zest , 200 ml water , 85 g sugar , 30 g butter When boiling I’m a separate dish stir 1 egg yolk , 60 ml cold water and 30 g cornflour , until smooth. Combine into the pot and stir until getting thick , take out from the stove and spread on the baked dough Meringue: Hit gently while storing 3 egg whites and 100 g sugar until melted , then blend on high speed until receiving firm egg foam Spread on the cake and put on high temp 250c grill mode in the oven for 3 min minutes Serving Size: Make 12 pieces, 24” cake
