12 oz Cubed Chicken 1 large Apple, diced1 stalk Celery, sliced½ cup fat-free plain yogurt1 Tbsp Miracle Whip Light2 tsp Lemon Juice1 ½ tsp Dijon-style mustard1/8 tsp Salt 1/8 tsp Pepper
Ahead of time boil chicken until done (10-15min). Cube & set aside until cooled. Stir together the yogurt, miracle whip, lemon juice, mustard, and spices until combined. Add cubed chicken, diced apple, and sliced celery and toss to coat. Cover and refrigerate. Serve in sandwiches or pita bread with lettuce and tomatoes, or eat as a cold side dish. YUM!!
