Kate's VEGAN Orange Kale Salad

Ingredients
5 cups, chiffonade Kale 1/2 cup Red Bell peppers julienne 1/2 cup Dried Goji Berries 1/2 cup rough chopped Almonds The juice of 1 orange (about 1/3 cup Orange Juice) 1 tbsp Apple Cider Vinegar, Bragg's Organic 1 tbsp Maple Syrup 4 small California Cuties Tangerines or mandarin oranges, peeled and sectioned 1 cup Lentils, cooked and chilled
Directions
In a mason jar soak the goji berries in the orange juice, maple syrup and vinegar for at least 10 minutes. Shake jar several times.

Mix the kale, peppers, almonds, oranges and lentils. Pour berries and juice over the salad and toss gently.
