Low FODMAP Vegan French Toast Casserole

.5 tsp Cinnamon, ground .5 tbsp Maple Syrup 6 serving Bread Alone Whole Spelt Sourdough (1 slice) (by BEKIS38) 1 cup Kirkland Organic Unsweetened Almond ND Beverage Vanilla (by BEKIS38) 1 tbsp Spectrum Essentials Chia Seed 1 tbsp Spectrum Essentials Organic Ground Flaxseed 1 fl oz Water, tap
Mix all ingredients except the bread in a large, shallow bowl. Place in the fridge to activate for 10-20 minutes.
Tear bread into chunks (preferably bread is stale or lightly toasted) and spread in shallow layer in baking dish.
Pour liquid mix over bread chunks evenly (or mix it lightly to cover evenly), and let sit for a bit to soak up liquid (potentially overnight).
Preheat oven to 350F.
Bake until most liquid is absorbed and top is brown and toasted.
