Keto Cheesy Broccoli Soup

1 cup, chopped Broccoli, par-steamed3 cup Chicken stock1/2 medium Onions2 TBSP Butter1/2 cup, Heavy Whipping Cream 7 oz Cabot Sharp Naturally Aged Cheddar Cheese - Vermont white cheddarSalt and Pepper to taste.
Cut broccoli into florets and steam for 10-15 minutes. In saucepan, cook onions in butter until they are clear. Finely chop the broccoli and add it to the onions. Stir-fry for one minute. Add Chicken stock, salt, and pepper. Bring to a boil and cook for about 15 minutes. Lower heat to simmer and add cream. Slowly stir in the chopped up cheddar cheese. Cheese should melt right away but stir it for a while to make sure. Remove from heat at once. Serve with parmesan crisps.
