Easy Veggie and Cheese Omelette

2 large Egg, fresh, whole, raw 0.25 cup, shredded Cheddar Cheese 0.5 cup, chopped Onions, raw 1 tbsp Milk, 3.25% 0.35 tbsp Extra Virgin Olive Oil 2 cup Spinach, fresh 0.5 serving 1 Med. Green Bell Pepper
1. Heat large skillet. Add oil. Saute onions and peppers until soft.
2 While veggies are cooking, heat a small omelet pan on medium and spray with cooking spray. Beat eggs with milk. When pan is hot, add egg mixture and tilt pan to cover bottom.
You can use other vegetables. Some for 1.5 c cooked. If you are avoiding oil, use a little low sodium broth. I also like to sprinkle some no salt seasoning in the veggies.
4. Add spinach to the veggie mixture. Cool until wilted.
5. Flip egg mixture.
6. Add cheese and top with vegetables.
7. Turn in half and eat!
