1 cup Coconut milk (light) 3 tsp A Taste of Thai - Red Curry Paste 1 bay leaf1 tsp Paprika 1 tsp Oregano, ground 1 dash Pepper, black 1 tbsp Extra Virgin Olive Oil .5 large Onions, raw ,chopped3 clove Garlic minced2 medium Carrots, choppedCelery 2 stalks, medium (7-1/2" - 8" long ,chopped.5 cup celeriac (celery root) chopped.5 pepper, large (3-3/4" long, chopped1 pepper Jalapeno Peppers ,chopped1 cup Kale, raw ,chopped8 Broccoli Florets8 large Shrimp, raw ,halved8 oz Trader Joe's Alaskan Cod Fillets , diced1 cup (8 fl oz) Water, tap
chop all the veggies, heat oil in a large pot, add onion and garlic saute for 4 min,add carrots and celery root,oregano, pepper, smoked or regular paprika powder and bay leaf,add the fish broth and water,bring to a boil ,let simmer for about 10 minutes,add the coconut milk and the thai curry let simmer 10 minutes adjust spices to your liking then you can add the celery,bell pepper, broccoli florets and the cod simmer for another 5 -7 minutes until cod is done ,add the shrimp cook until shrimp is done. serve. with or without bread.
Serving Size: makes 4 servings at 2 cups.as a meal. 6-7 servings as a starter.
