6 Chicken Tenderloins (boneless skinless cut in half to make 12 strips)1 c Pork Rinds (crushed)1 tsp Southwest Seasoning MixSalt and Pepper
Crush pork rinds in a large zip lock bag. Add southwest seasoning and shake until mixed. Cut tenderloins in half to make long strips. Put into zipper bag with coating and shake until all pieces are coated well. Preheat oven to 450 degrees. Line a cookie sheet with aluminum foil. Line chicken tenders on cookie sheet leaving about 1 inch between each strip. Bake for 10 minutes then flip each strip over and bake another 10 minutes. Serve with your favorite dipping sauce. These are great reheated as well!
