Mashed Spinach and Cauliflower

Ingredients
1 head, medium (5-6" dia) Cauliflower, raw 1 cup Baby Spinach Organic 30 gram(s) Daisy - Sour Cream 0.5 cup Colby and Monterey Jack Cheese shredded 2 tbsp Kelapo Ghee-Clarified butter 1 serving Green Onion (fresh-1 stalk)
Directions
Steam cauliflower and drain well. Cook spinach and green onions in 1 tbsp. of ghee until slightly soft. Add cooked cauliflower to a food processor and blend. Add spinach, onion, 1 tbsp. of ghee, sour cream and shredded cheese to food processor. Blend well. Salt and pepper to taste.

Serving Size: makes 8-1/2 cup servings.
