Paula's Healthier Greek Yogurt Cheesecake

Ingredients
4 cup Yogurt Plain Greek Yogurt, non-fat 8 medium Egg, fresh, whole, raw 14 oz Eagle brand fat free sweetened condensed milk, 14oz can (by KDA1981) 8 serving Great Value No Calorie Stevia .25 cup Flour, whole wheat, cake and pastry, Milanaise (by LESLEY210) 3 serving Graham Crackers, Honey Maid Low Fat Honey Grahams (2 full crackers = 1 serving = 35 g) 1 cup, halves Pecans 1 cup, sliced Almonds 1 tsp Cinnamon, ground 1 stick Butter, unsalted
Directions

Preheat Oven to 350
In a med glass bowl place 1 cup pecans, and 1 cup slivered or shaved almonds (both ground until smooth with a few coarser pieces), 4 oz graham crackers( Also ground until it looks like corn meal or grits) Add 1 teas ground cinnamon and 1 stick of butter( melted) Mix well and place in the bottom of a 12 inch springform pan. Use the bottom of a flat measuring cup to press down all the way to the sides of the pan. Bake at 350 for 15 min until toasted.
Meanwhile in a large blender mix 10oz can of fat free sweetened condensed milk, 8 eggs, and ¼ cup cake flour until smooth. Add 32oz plain greek yogurt, 1/8 cup stevia( the kind that measures like sugar) Or you can add honey, sugar or aspartame to taste if you prefer. Less is more in my opinion. Blend well- usually on low for 2-3 minutes
****Optional- you can also add 1 tbls vanilla for vanilla cheesecake, or you can also add 3 tbls cocoa powder and blend again for chocolate cheese cake, you can also add lemon or lime juice one tablespoon at a time for lemon or lime cheesecake. Blend after each addition before adding more If you DO decide to make the chocolate or citrus versions you might want to add a touch more sweetener.
Pour into crust and place in the bottom of a sheet pan with sides, that is large enough to accommodate the springform pan. Place in 350 over and then pour enough water around the sides of the springform pan to cover the crust. You don’t want to burn the crust. Sprinkle with a sparse dusting of ground cinnamon if you like
Bake at 350 for 70-75 min to 1:15- until center is set. The top will also have a few golden brown spots on it. Allow to cool before chilling at least 2 hours. Makes 16 servings.
