Tropical Melange Salad

Ingredients
1 cucumber, peeled, seeded, & diced1/2 t minced fresh jalapeno2 T fresh lime juice2 t brown sugar2 T shredded coconut1 mango, peeled & diced1 small red bell pepper, minced1 T chopped fresh cilantro or spearmint leaves
Directions
In a large bowl, combine the cucumber, chile, lime juice, brown sugar, coconut, mango, & bell pepper. Toss well. Cover and chillf or a t least 15 to 20 minutes and serve cold or at room temperature. Just before serving, top with cilantro or spearmint.
