Ramekin Egg Casserole

Ingredients
3 serving 1 Egg- large, fresh 1 tbsp Half and Half Cream 2 medium Mushrooms, fresh 2 serving Cherry Tomatoes, Fresh, 1 Tomato 1.5 tbsp Cheese-Chevrai Goat Cheese crumbles
Directions
In ramekin, whip eggs and cream together. Stir in sliced mushrooms and tomatoes. Fold in 1 tbsp. of cheese. Bake in preheated 350* oven for 20-25 minutes until center is set. Remove from oven and top with remaining cheese. Let cool and refrigerat.

Serving Size: Make as many ahead as you need or want. A ramekin makes 1 serving
