Fried Salmon Patties

2 tbsp Extra Virgin Olive Oil 3 tsp EnerG Egg Replacer thoroughly mixed with 4 tbsp warm water 2 tbsp Vegenaise, Soy Free (1) 14.75 oz can of Royal Red Sockeye Salmon25 Soup & Oyster Crackers (the mini kind)
Remove skin and bones from salmon (optional)
Mix all ingredients except olive oil thoroughly in a bowl.
Heat olive oil in 12-inch skillet on medium heat
Scoop mixture into 5 seperate heaping tablespoons onto hot skillet pressing and molding into patties. Fry approx 7 minutes on each side.
Serving Size: Makes five 1/2 cup servings
