1.5 cup Flour, white 1 cup Granulated Sugar 2 tsp Vanilla Extract 8 tbsp Smart Balance Buttery Spread 1 fruit without seeds Lemons 1 cup, unsifted Powdered Sugar .25 tsp Baking Powder .25 tsp Baking Soda .25 tsp Salt 3 large Egg, fresh, whole, raw .35 cup Sour Cream
Preheat oven to 325°F.
Beat butter and sugar until creamy.
Add eggs one at a time.
Add vanilla and lemon zest + juice of half a lemon.
Whisk together dry ingredients.
Add dry ingredients and sour cream a little at a time to the wet mix.
Make glaze with powdered sugar and Lemon juice.
Bake for about 50 minutes in an 8 by 4 inch loaf pan.
Cool 15 mins, then glaze.
