Zucchini Tomato Toss

Ingredients
4 cups thinly sliced zucchini2 medium tomatoes, diced1/4 cup thinly sliced green onions3/4 cup white wine vinegar or cider vinegar2/3 cup vegetable oil1 garlic clove, minced2 tblsp sugar1 tsp salt1 tsp dried basil
Directions
In serving bowl, combine zucchini, tomatoes and onions. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pur over zucchini mixture and toss gently to coat. Cover and refrigerate for at least 2 hours. 8 (1/2 cup) servings.

    I have cut the amount of dressing in half and this was still plenty, also used fresh basil and added some rocket and olives... very tasty. - 1/3/11

    This is wonderful...I added a few chunks of low fat mozarella. and used balsamic vinegar. - 8/12/09
