Eggplant Tofu Quinoa stir fry

Ingredients
2.0 tbsp Grapeseed Oil2.0 cup, diced Celery, raw2.0 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh2.0 tsp Garlic0.5 cup, chopped Kale1.5 cup, chopped Onions, raw0.5 cup, sliced Zucchini1.5 cup, sliced Summer Squash349.0 Grams Mori-Nu, Tofu, silken, extra firm1.0 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry4.0 tbsp Kikkoman Teriyaki Sauce & Marinade
Directions
Marinate tofu overnight in teriyaki. Get quinoa going on cooker. Cook tofu. Cook veggies, then mix tofu in with all the marinade. Mix in quinoa and kale. Fill 4 containers with equal portions. Serving Size: Makes 4 2-cup servings
