600 grams Cauliflower, raw (riced)2 tbsp Extra Virgin Olive Oil 1.5 Fresh Tomato (chopped) 4 Garlic cloves (chopped small)2 large entire green onions (chopped)1 fresh yellow Peruvian chili peppers (chopped fine)100 grams Black Olives (seeded and chopped)25 grams Parsley (chopped)25 grams Basil (chopped)25 grams Mint, fresh (chopped).5 large Cucumber (peeled and quartered) .25 cup Lemon Juice
1. Rice the cauliflower in a food processor. Set aside.
2. Chop the tomatoes and let sit in olive oil, salt and pepper.
3. Add rest of herbs and ingredients. Stir all together.
4. Add riced cauliflower and stir together.
Serving Size: makes 4- 1.25 cup servings
