Poutine, healthier alternative

Ingredients
1 large sweet potato2 cups low-fat cottage cheese2 cups chicken gravy2 tbsp olive oilherbs to taste (basil, rosemary, pepper, etc. Be creative!)
Directions
Preheat oven to 350°F.

Cut sweet potato into wedges (2" long by 1/2" thick).
Add olive oil and herbs to sweet potato wedges; toss in a large bowl.
Place sweet potato wedges on a baking sheet in a single layer; bake 15-20 minutes or until golden brown.
Heat up chicken gravy in a saucepan.
Place sweet potato wedges in a bowl or on a side plate. Cover with cottage cheese and gravy.
Serve hot.

Makes 6-8 servings.

    Not as good as the "real thing," but pretty passable. Mine was actually probably a little less healthy since I baked pre-made French fries in the oven instead of the sweet potato. - 12/22/08

    I agree with RUBINIA. I used frozen sweet potato fries instead of making my own.

    It was not bad. Obviously, not as good as the real thing but if I'm ever craving poutine badly this is a good substitute. - 1/14/11
