1 large sweet potato2 cups low-fat cottage cheese2 cups chicken gravy2 tbsp olive oilherbs to taste (basil, rosemary, pepper, etc. Be creative!)
Preheat oven to 350°F.
Cut sweet potato into wedges (2" long by 1/2" thick).
Add olive oil and herbs to sweet potato wedges; toss in a large bowl.
Place sweet potato wedges on a baking sheet in a single layer; bake 15-20 minutes or until golden brown.
Heat up chicken gravy in a saucepan.
Place sweet potato wedges in a bowl or on a side plate. Cover with cottage cheese and gravy.
Serve hot.
Makes 6-8 servings.
