Chicken Sausage Kale Soup with Chickpeas

2-3 Aidells Chicken Apple Sausage, sliced into coins and then halved6 cups Chicken Broth(Reduced Sodium)1/4 Red Onion, chopped1 cup chopped Zucchini 4 cloves Garlic, diced1 Roma Tomato2 cups chopped curly Kale 2 tbsp Basil 1 tbsp Thyme1 tsp Rosemary, crushed3 small Red Potatoes, finely diced1 can Chickpeas (garbanzo beans), drained1 tbsp Coconut Oil 1/2 tsp Cajun Seasoning Salt
Heat the coconut oil in a wok, add garlic and onion. Sauté until soft, then stir in sausage. Cook until browned, then stir in zucchini and tomato. Cook for one minute, then add herbs, Cajun spice and a pinch of salt. Add potatoes, broth and kale. Cook until the potatoes are tender--about 8 minutes--then stir in chickpeas. Taste and season if necessary. Serve hot.
